Talitha and Ted, lifelong health food junkies. Believing in the philosophy of everything in moderation, until a new thought started to take over. What if your health food tasted as cravable and satisfying as French fries, ice cream, pizza, etc.? Talitha delved into food like never before, cooking and tasting and cooking and tasting, using the highest quality ingredients she could find, cooking with the seasons, and finding farmers with the best-tasting organic produce. Ted ate every single experiment, and everytime he ate something of hers , he excitedly said “This is unbelievable, it’s the best thing I’ve ever eaten.” And with those happy thoughts filling her aura, just like Tinker Bell and Peter Pan, because he believed she could she did.. Together with Talitha’s growing ability to make the healthiest tastiest foods and Ted’s skill at doing the things that need to be done, securint loans, endless talking on the phone making business deals, and becoming a handyman out of necessity, because everything breaks down in the restaurant business.
Talitha’s mother brought her along on her journey to healing her chronically ill body. Going to China for an extended time, moving to Becket Massachusetts for a couple of years while her Mom studied at the Kushi Institute, then bringing that knowledge back to Utah and teaching the Relief Society in her basement. The idea that food is medicine and holds a large role in the overall well-being of a person was a brand new idea that some people couldn’t wrap their heads around it in the 90’s. Through osmosis, Talitha picked up a lot of knowledge.
As she got older she began breaking the rules of her Macrobiotic upbringing, making ice cream out of superfoods and medicinal mushrooms and calling them Dream Cream, because they are just so dreamy! Then folding the principles of macrobiotics back into cooking, and tonic building. It creates a balance that everyone benefits from, which can be hard to achieve in any diet, but most especially a plant-based diet.
In 2017 Talitha opened Rebel Tonics. Selling Mushroom Tonic, Adaptogen drinks, and Dream Creams at farming markets and festivals in Utah. In 2020, when the world shifted and everyone was polarized. Ted and Talitha moved to Maui to focus on health.
They opened Rainbow Kitchen + Rebel Tonics on the North Shore of Maui in 2021, it was a slow build, and recipes were tweaked. They made a name for themselves on Maui and loved the community, culture, and tropical fruits and vegetables to make all sorts of goodies. In 2024 they decided to expand R+R to the mainland and see if their magical drinks and food could find an audience here. That is when they met the wonderful women creating Evolve Wellness Collective. It felt like a match made in heaven. In May of 2024, they will open Rainbow Kitchen + Rebel Tonics in the heart of Evolve Wellness and together they will create a wellness frequency so bright that people can’t help but be drawn to heal.
